After dividing the dough
into 4 pieces of about 12 ounces / 340 grams each and in the bowls I
use to equalize the weights. I let them rest in the bowls for about 10
minutes to relax the doughs. SInce I have four identical bowls, I know
that the total weight of each bowl and dough should be the same. I use
the scissors to snip dough until the weights are the same. I realize
this sounds like too much precision, but it's all in a good cause. |
