Return to Barry Harmon's Artisan Bread Baking

Portuguese Corn Bread crumb. The finished Portuguese Corn Bread crumb. As with most corn breads I've seen, this is a tight crumb without many holes in it. Even though there aren't any holes, the expansion and loft were very good and the bread turns out to have a fairly light texture. All in all, a very nice loaf.
