Silesian rye Sourdough bread. The doughs finished rising. These have a good round shape. Watch what happens after slashing.
Silesian sye Sourdough bread. Notice how the loaves have deflated just a bit. I think this might be due to a slight over proofing, but it could also have been caused by a wet dough.
Silesian rye Sourdough bread. The loaves out of the oven. Good looking, but not quite as round as I wanted.
Silesian rye Sourdough bread. Good crumb, but the loaf isn't as high as the one in the book.
